Santa Fe is one of my favourite places in the USA. It has all those woderful adobe buildings. It even had an Adobe Woolworths.
I spent a morning at the excellent Santa Fe School of Cooking and a fair part of the rest of my trip sampling the local restaurants. One could pile on a lot of weight in Santa Fe.

We had a great time dining in Santa Fe, lots of wonderful restaurants, and I'm envious of Hugh getting to go to the Santa Fe School of Cooking. I would love to go back and do that. What did you learn to cook, Hugh?

I learned how to cut onions properly but the thing that sticks in my mind is how to make perfect mashed potatoes.

What the chef said made a lot of sense to me. 'The difference is in the dairy'. He put in lots of butter and cream, lots and lots of cream in fact. I thought 'I can do that' and ever since I have. Never mind the calories look at his width. I really must go on a diet.

Did they put chili in those mashed potatoes, Hugh? Seriously, this is very interesting. I've always wanted to attend the Santa Fe School of Cooking, but I was thinking I'd learn to cook the New Mexican style cuisine, which I love. It just goes to show the range of cooking you can find there.

All the way to Santa Fe to learn how to cook mashed potatoes? The best I ever tasted were at Heathcote's Restaurant in Longridge, near Preston in England.

The range taught at the school is incredible. And no we didn't put chillies in the mash. I now put fresh pesto sauce in mine on occasion or parmmesan cheese.
The school had a shop where we were able to buy tins of chillie powder and other herbs. I still use the tins.
